[Throwback Article] Takoyaki, a traditional Japanese fast food

Takoyaki (octopus balls) originated from Osaka and is now enjoyed throughout Japan. 

Two of the most common foods offered by mobile food stall at festivals are yakisoba and takoyaki. 
Takoyaki are also often found in food courts at restaurants. 
One of the attractions of takoyaki is the incredible contrast between the texture of the crispy outside and the fluffy inside combined with the chewy piece of octopus in the center. 
Other reasons behind the popularity of takoyaki include a size that is just right to eat using a toothpick, and the fact that it is perfect for a snack or light meal and for sharing while you are walking with friends.

A steel plate with many special indentations just for takoyaki is required to make takoyaki.  


Shops grill takoyaki on gas-powered steel plates that make hundreds of takoyaki. 


The way the workers skillfully and quickly turn over the takoyaki with a skewer is impressive.  


There are also electric-powered takoyaki hot plates for use at home that you can plug in for making a few dozen pieces of takoyaki.

You won’t need to have that quick or skillful of a hand to make takoyaki using a device like this. 


Sometimes friends get together and bring various ingredients to have a takoyaki party. 


People able to make round takoyaki at occasions like these are the life of the party!  



So what is the secret for skillfully making takoyaki? 


In short, the secret is to turn over the takoyaki when it has become sufficiently hard and to go around the indentation with the skewer once before turning over the takoyaki to ensure that it can be easily separated from the hot plate.
