[Fun! Japan Reporter] The Variety of Japanese Kitchen’s Ingredients

I went to a hypermarket in the city and went into a Japanese grocery store to search for green tea powder, when I realized so many assortments in front of my eyes, from simplest ingredients such as salt to ready-to-take food products and beverages such as snacks. 


Japan is famous for its highly-efficient community and the productivity is sustained by speed. When it comes to meals, they have a lots of canned foods, food pouches, seasonings and soups which have been processed to meet consumers’ demand from flavor profile, texture profile and  speed of preparation. I bought a pack of パン粉(Panko) or breadcrumbs and a pack ofわさび味おかず(wasabiajiokazu) or Wasabi-flavored seaweed.

I decided to make Sushi with seaweed strips I cut from the original bigger pieces. I have made Tamago sushi and Kanikama sushi. The Wasabi flavor was quite strong, even stronger than the seaweed flavor, with a typical pungent note. I missed the pure seaweed flavor in Sushi, which had been overcame by the Wasabi flavour. The original seaweed is better if you want to taste the  mild sweetness of the seaweed leaves in Sushi.

I had never tried frying foods with breadcrumbs before this but frying crispy foods was hard without Sodium Bicarbonate. Wheat flour, bread powder, bean powder, salt and vitamin C are the components of the breadcrumbs. No preservative or seasoning is added to this dried ingredient.

First time frying with breadcrumbs was not tough at all. At least, I did not have to mix my own batter now. I made potato croquettes or Korokke. I added the Wasabi-flavored seaweed and cheese to the mashed potato, shaped it, coated every piece with flour, egg wash followed by breadcrumbs before I fried it.

They were delicious with cheese, seaweed and wasabi flavor on the inside while they were crispy on the outside.  Panko is suitable to be used to fry seafoods, meats and various foods. You can now make fish and chips at home! However, the crispy layer of Panko is tasteless, thus, I suggest you to add seasonings such as salt, sugar and pepper to your foods or dip fried foods with sauces. Chilli sauce or mayonnaise is especially best companion with Panko-coated fried foods. In the past, I always blended various spices into my frying batter and the result is not very smooth with dipping sauce.
