The tasty ramen with a secret recipe at Kumamoto

If you were to talk about Kyushu ramen everyone would first think of “Tonkotsu ramen” (豚骨ラーメン) which is ramen with pork bone broth. But not all the shop will have the same taste as each shop will have their own secret recipe to make the soup special. Most Tonkotsu ramen will have a concentrated flavor, if you never try this before you might find the soup salty but a lot of shop will let you choose how concentrated the soup will be, so I recommend you to go for the lighter flavor (あっさり).

But if you prefer soup that are less concentrated, today I will introduce you to a small Japanese style shop in Kumamoto prefecture that I am a regular of.
Once I have tried the shop’s Tonkotsu ramen I would have to say I like the taste of the soup because the taste is mild and not too salty, compare to the other original ramen shop in Kumamoto which will be more concentrated. But this shop doesn’t let you choose how concentrated the soup will be so I think it’s best for people who like their soup lighter.

Other than Tonkotsu ramen this shop also has another specialty which is Shio ramen (塩ラーメン). Shio ramen is noodle with clear, yellowish broth similar to Thai’s wide rice noodle soup. I’ve tried this and it becomes my personal favorite because of its soft but chewy noodle and flavorful soup that even small kids can enjoy them. I have to say Shio ramen is one of the most popular menus for the shop because some day if you come too late they’ll already be out of Shio ramen broth. It really is delicious!!

Now let’s look at the other specialty of this shop which is Chashu pork. Normally in other shop their Chashu pork will be small thin slice of meat but in this shop the slice is bigger and thicker and is perfectly braised with a lot of flavoring.

And this year the shop also adds a menu for people that love Thai dish with “Tonkotsu ramen served with red curry rice set” for only 780yen. This set will only be available on Friday and on other day will be another special set. Other that their ramen and red curry they also serve other menu too such as fried rice, fried chicken or gyoza.
