Sumiso ae-Vinegar and Miso Sauce

Miso paste is a Japanese traditional seasoning produced by soybeans, and one of the most popular pastes in the world.
How many recipes do you know with miso paste besides miso soup?
I want to introduce you “Sumiso-ae” dish today.
It is a simple and delicious dish with vinegar sauce and miso paste.
So easy that you only need three different kinds of ingredients to make this sauce.

Ingredients:
Miso                2 tbsp
Vinegar           1 tbsp
Sugar              1 tbsp

I always measure with my eyes and tongue, but I think by adding 2 tbsps of miso to 1 part vinegar, and to 1 part sugar is the best quantity.
Mix them all together and stir.
Of course, you can add more vinegar if you want it to be more sour, and add more sugar if you like it sweet.

I’ll show you a few examples of uses of this “sumiso” sauce.

In the title of Sumiso-ae, “ae” means dressing foods.
So simple to dress with firefly squids.

Seafoods go great with sweet and sour flavor sauce. 
You won’t even need a frying pan, knife, or fire to prepare this dish.
Keep it in your refrigerator for a while which helps the squid absorb the sauce.

Another way to make a dish is to mix with tuna and boil green onion.
Throw cut green onions into boiling water for about 10 seconds, drain them and put them into the iced water. 
This makes the color of the green onion brighter.
Wring water out of it and mix them with the sauce and tuna.

Sumiso is a healthy sauce without oil.  
A very nice way to eat vegetables and seafood druing the season.

It can be used as a salad dressing and a dip as well! 
When you want to use it as a dressing, add a little extra vinegar.
