While "Hitsumabushi" traditionally involves pouring broth over grilled eel, at this restaurant, the concept is applied to seared wagyu beef. The thinly sliced ribeye is seared directly over a high flame, giving it a melt-in-your-mouth texture. Served over rice, the combination of the tender meat and fluffy rice is sure to impress. Featuring "Shintama," a prime lean cut of Kuroge Wagyu known for its tender texture and rich flavor, this beef is seared at 1,000°C over an open flame and served on top of freshly cooked rice.
