Menchi Katsu (Mince cutlet) - The popular menu of Japanese Butchers


If you visit the local market in Japan, you will find a queue at one of the shops. Wondering what they are wanting to buy.
Yes! they are waiting for buying a menchi katsu fresh from the frying pan! Menchi katsu will taste very good if you eat just from the frying, while it`s still very hot.
You can cook this menchi katsu by yourself at home since the ingredients can be found easily at the supermarket or the shop nearby.

Ingredients (Serving for 6)

  • 300g Ground Beef (you can combine with 50% ground beef and 50% ground pork)
  • 1 onion
  • ½ tsp salt
  • ½ tsp sugar
  • ½ tsp black pepper
  • ¼ tsp nutmeg
  • 8 tbsp panko (bread crumbs)
  • 1 egg

Batter:

  • 6 tbsp flour
  • 2 eggs
  • ½ cups panko (bread crumbs)
  • Vegetable oil for deep frying

How to cook:

  1. Mince the onion, then put it in a microwave-safe container, cover the container with kitchen wrap, and microwave at 750 watts for 3 minutes.
  2. Place the ground meats in a bowl and mix together. Mix in the salt, sugar, nutmeg, and black pepper. Then, mix in the bread crumbs. Once they have fully integrated, add the beaten egg.
  3. Add the cooled-off onion to it and mix. Refrigerate for 5 minutes to chill the meat mixture to firm it, making it easier to shape.
  4. Divide the chilled meat mixture into six equal portions, then shape them by hand into oval patties.
  5. Coat with flour, then beaten egg, and panko bread crumbs.
  6. Fry the breaded patties in 170°C oil until they are golden brown all over (about 6 minutes)
