Do you know what Ichijiku (いちじく) means? In Japan, the Ichijiku means ‘fig’ and is a berry-like seasonal fruit usually consumed fresh and eaten as an appetizer, or processed into a jam. It is said that Ichijiku were introduced to Japan at the beginning of the Edo Era, from Persia through China.
I have always heard of Ichijiku being used as jams in Japan, but imagine my surprise when I found a dorayaki in which the pastry is made of fig in Kanazawa.
This light snack came highly recommended by the shop keeper as I was looking for a souvenir for my friends. The exterior is a beautiful natural light green color. Unlike the typical dorayaki that has a solid cake covering, this fig dorayaki has a light cake that was purposely cooked with air bubbles, resulting in a fluffy casing for the filling. Furthermore, it is one piece of cake folded into half, instead of two pieces creating a sandwich.
The filling is made of red beans and some fig puree. The taste is not too sweet, and complements the cake very well. I was suggested to consume this delightful pastry with light green tea, and it was absolutely delicious!
