You can truly feel the changes of the seasons when you are in Japan, such as gorgeous cherry blossom in the spring, a cicada’s chirp in the hot and humid summer, and spectacular illumination in the city or snowfall on the Mt.Fuji in the winter.

And don’t forget beautiful ginkgo trees changing color to bright yellow in the autumn.
It is breathtaking.

At the end of autumn, ginkgo nuts fall off on the ground from its trees.
As the nuts rot, they give out a strong intense smell.
Seriously, it is really bad.
But I kind of like this smell.
I know it sounds bizarre but I look forward to this time of the year to come, because ginkgo nuts taste great!
You just have to go through a few steps before you will be able to eat them.

What you need to do to prepare is to put some rubber gloves on to pick the seeds out, and then cleanse the gooey part on the outside, that is the smelling part.
Then you will see a nut covered with a hard shell.
Sundry them for a few days.
When the shell turns into white, it is dry.

If you were in Japan this time of the year, it is easy to find ginkgo nuts all prepared in a pack at the supermarket for between 150yen to 200yen.
So whenever I feel like to eat them, I would just go to a market and purchase them instead of going through painful process.

Now nuts is ready.

Only a few more steps to eat them up.

Grilled them on a pan for about 5 minutes, you will see the surface gets slightly burned.
You will hear one or two nuts pops, then it is finally done.

Use a pliers or something to break the hard shell.
There is a greenish yellow nuts inside.
sprinkle some salt and its all ready to eat.

Whenever I bite into it, I can feel this time of the year finally came.
I love it so much that this is the one of the thing I miss when i’m abroad.
I definitely want everyone to try it at least once in a life.
