Shio-mame-daifuku is one of the most famous Japanese sweet. Its soft and chewy skin is made with a little bit salted Mochi, the filling is red bean paste called anko.
The name Daifuku originally used the kanji 大腹, which means “big belly”, as the mochi’s thick texture would make you feel full very fast. However, the kanji was later changed to 大福, which means great luck! A funny word-play as they both read the same!
This mame version has black beans kuromame between the skin and the filling.
The lightly salted taste of the skin makes a good balance with the sweetness of the red bean paste.
Shio-daifuku are loved by everyone in Japan, from kids to elderly.
