I love tofu so much. It is one of the foods I miss when I go abroad. Good tofu.
It is such a perfect food that contains good nourishing and also very healthy.
Yudofu is simply tofu cooked in hot water.
“Yu” means hot water and “dofu” is tofu.
It is often served at our dinner table in all season, it doesn’t matter summer or winter.
Do you think it is not so filling and tasteless?
I will show you some hints to make yudofu more flavorful.

First of all, there are no rules.
You can put anything you want.
Here is our dinner table from the other night.
Besides tofu, I put a lots of vegetables.
Such as hakusai(chinese cabbage), bean sprouts, green onion, shungiku(chrysanthemum coronarium) and etc… Also I put thin sliced beef like shabu-shabu and homemade wontons.
A filling of wonton is minced chicken, chopped garlic, ginger, chopped shiitake mushroom, salt and paper.
Very easy.
A Wrapping of wonton is basically considered as noodle.
It is for texture and something to fill you up.
Once again, there is no rule what to put in the pot.
I sometimes substitute fish for meat.
It is good as well.

Dipping sauce is more important than what you put in the pot.
I like soy sauce with cold tofu, but I prefer ponzu sauce for yudofu.
In addition to ponzu, I prepare sliced green onion, grated daikon and also grated garlic with a pinch of chili in sesame seed oil in separate little containers.
Then, you put these condiments in your ponzu sauce a little by little as you like.
You will be surprised how the flavor will be changed.
Of course in a good way.

One of my friend who is a good cook taught me this great tip which is my favorite condiment  now.
Mix egg yolk, chopped green onion and katsuobushi(dried bonito) in soy sauce in a small container and then put the container itself in the hot pot, so egg yolk will be cooked and gets thick as it gets hot.
Like other condiments, you put on tofu a little by little as you like.
It is like thick soy sauce with fish flavor, but you can still taste the mellowness from egg yolk.
So delicious!

Do you still think yudofu is too plain and uninspiring after I introduced these tips to make it flavorful?
You better try it to believe it.
You will see tofu as completely different food.
