Kuzu mochi is a very refreshing wagashi (Japanese traditional sweet) available in summer.
The jelly like skin and the not-so sweet taste are perfect during hot days.
Even if it’s name is “mochi”, kuzu mochi is a treat that doesn’t contains any rice flour but only kuzu powder.
Kuzu powder is made from kudzu roots, and gives a jelly-like texture when mixed with water.
It has natural and vegetal ingredients that is perfect for those who can’t eat animal based gelatin.
The classic kuzu mochi served in summer is made with a ball of smooth red bean paste (anko) wrapped with a kudzu jelly skin which is then served cold.
You can find some variations, like this one which is quite unusual:
Kuzu shôga, ma kuzu mochi flavored with fresh ginger.
White bean paste based heart and the kuzu skin are both containing fresh grated ginger.
The result is super refreshing with a lemony taste and a spicy twist since the ginger used is fresh.
This is one of the best summer wagashi I have ever tasted!
