The Japanese enjoy alcohol with their meals and produce various types of beers, sake, shochu and wine. However, the drink I find most easy to consume and match with food is umeshu.
Umeshu literally translates to plum wine, and has a delicate, gentle and rather sweet taste.
The most exciting thing about umeshu is that you can easily make it at home!
I bought 1kg of plums and the other ingredients (listed below), and got started with my own umeshu!
Ingredients you will need:
- 1kg of Plums
- 0.5-0.8kg of Rock sugar, depending on your preference
- 1.8L of white liqueur or brandy
- 5L container
- A few toothpicks
- Step 1: Clean the bottle and ensure it is dry.
- Step 2: Wash the plums in water. Once washed, place them on a dry towel and dry them.
- Step 3: Place the plums and rock sugar into the jar. Place one layer of plums, then a layer of rock sugar. Repeat until all ingredients are used.
- Step 4: Pour the white liqueur or brandy into the jar with the plums and rock sugar.
- Step 5: Place in a cool, dark place and wait for a minimum of six months.
